<p>Ingredients:</p>

<li>1 Bread loaf with a nice crust on it</li>
<li>450g cherry tomatoes</li>
<li>4 Garlic cloves</li>
<li> Basil (fresh)</li>
<li> Salt</li>
<li>5 tablespoons of good Olive oil</li>
<li>Mozzarella (get the Irish made Buffalo mozzarella from the olive stall in the English Market)</li>

<p>1. Dice your tomatoes and put them into a bowl along with finely diced garlic and a generous handful of basil, which can be roughly chopped using a sharp knife or just by tearing with your hands.</p>

<p>2. Now add the olive oil and mix together. Let sit for at least 10 minutes. I think the longer it sits the better the flavours combine.</p>
<p>3. Slice the bread and put it under the grill to toast. Keep an eye on them as they will burn easily. When they&#8217;re ready remove from the grill and spoon some of the bruschetta on the slices of bread and place on a plate.</p>
<p>4. Dice up some mozzarella, place on top of the bruschetta and serve.</p>
<p>Enjoy.</p>
